  • 4 boneless pork cutlets
  • Salt and pepper
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Oil for frying
  • Lemon wedges

Method
 

Instructions
  1. Pound pork cutlets thin and season with salt and pepper.
  2. Dredge in flour, dip in egg, then coat with breadcrumbs.
  3. Fry in shallow oil until golden and cooked through, 2 to 3 minutes per side.
  4. Drain and serve with lemon.

Notes

  • Do not press breadcrumbs too hard; a loose coating fries lighter.
Safety note: Cook pork to at least 145 degrees and rest before serving.
