  • 1 quart vanilla ice cream
  • 12 ounces semisweet chocolate
  • 2 tablespoons coconut oil
  • Chopped peanuts, optional

Method
 

Instructions
  1. Line a loaf pan with parchment. Press softened ice cream into the pan and freeze until firm.
  2. Cut frozen ice cream into bars. Insert sticks if desired and freeze again.
  3. Melt chocolate with coconut oil until smooth.
  4. Dip frozen bars in chocolate and add peanuts if using.
  5. Freeze until set.
