- Whisk sugar, flour, and salt in a saucepan. Slowly whisk in milk.
- Cook over medium heat until steaming. Whisk egg yolks in a bowl, then slowly whisk in a little hot milk mixture.
- Return egg mixture to saucepan. Cook, stirring, until thickened.
- Remove from heat and stir in butter and vanilla.
- Layer wafers, bananas, and custard in a dish. Repeat layers.
- Chill before serving.
Notes
- Top with whipped cream or meringue if desired.
- Bananas should be ripe but not mushy.
